Pimientos rellenos de cordero     

     ¿Quieres deshacerte de la sensación que te produce la lluvia? Tengo la solución perfecta. Pimientos rellenos de cordero. Advertencia, comer con el estómago vacío para poder probar más de un par de estos, créeme, querrás hacerlo. Los hice el otro día e incluso metí una receta vegana para mis amigos que no comen carne. Hay que tener un poco de paciencia para hacerlos, pero vale totalmente la pena. Empecemos con ello.

Ingredientes (3 porciones) 

  • 1/2 taza de arroz blanco
  • 2 cucharadas de aceite de oliva extra virgen 
  • 5-6 chalotes 
  • 2 dientes de ajo 
  • 250 g de cordero molido 
  • 2 tomates 
  • Sal
  • Pimienta
  • Chile serrano
  • Paprika 
  • 3 pimientos morrones 
  • Queso Oaxaca 
  • Unos tallos de perejil fresco

Procedimiento 

     Personalmente, soy una persona que se asusta cuando ve esto en una receta, pero ten paciencia conmigo… así que, precalienta el horno a 200° C. Para el arroz, en una cacerola, añade 1 taza de agua y 1/2 taza de arroz. Tapa la cacerola y deja que se cocine durante unos 15 minutos, controlándolo de vez en cuando. Para los tomates, hiérvelos en agua durante un par de minutos y luego licúalos con un poco de sal y pimienta. Ahora pasamos a los pimientos, para estos si te preguntas que tipo de pimiento usar, la diferencia de colores solo depende de los niveles de maduración. Empezando por el verde y terminando por el rojo, así que si quieres uno más dulce, debes ir por uno rojo.  Corta la parte superior y quita el corazón. Pica los chalotes y el ajo. Luego, en una sartén, calienta el aceite de oliva a fuego medio y añade el chalote. Espera un par de minutos y añade el ajo hasta que huela rico. Añade el cordero molido hasta que deje de estar rosado, después añade un poco de perejil picado… créeme, el perejil va muy bien con el cordero. Agrega el arroz ya cocido y la salsa de tomate que hicimos. Sazona con sal, pimienta, paprika y un poco de serrano picado, por favor no te saltes este paso, no lo hace picante y le da mucho sabor. Deja que se cocine a fuego lento hasta que el líquido se haya reducido. Después, corta los pimientos por la mitad y colócalos en una bandeja, agrega la carne sobre ellos y cubre con el queso Oaxaca. Echa un poco de aceite de oliva por encima y hornea hasta que los pimientos estén tiernos, ten cuidado, vigílalos antes de que se pongan muy blandos. Sirve y adorna con más perejil. 

     Una alternativa vegana para estos, es cambiar el cordero por champiñones, estos los hice para una amiga que no come carne y le encantaron. Es el mismo proceso solo que se cambia. Puedes añadir queso vegano para el resultado final.

     Así que ahí está, tu ingesta diaria de vitamina C y proteínas. Es un plato increíble y no se tarda tanto en hacer. Es divertido comer directo de un pimiento de vez en cuando. Pero ten preparada una servilleta… Acompáñalo con una bebida refrescante y disfruta de tu día de lluvia. Incluso puedes utilizar esta receta como excusa para una cita. Dile a algún ser querido y tengan una cita para cocinar, son muy divertidas y al final pueden disfrutar de los resultados juntos. Respira, agradece y mejora. Lamb Stuffed Peppers 

    Wanna get rid of the feeling rain brings? I have the perfect solution. Lamb stuffed peppers. Warning, eat on an empty stomach so you can eat a couple of these, believe me, you’ll want to. I made these the other day and I even snuck a vegan recipe in here for my friends who don’t eat meat. It takes a bit of patience to make, but it’s totally worth it. Let’s get on with it. 

Ingredients (3 servings) 

  • 1/2 cup white rice
  • 2 tbsp extra-virgin olive oil 
  • 5-6 shallots 
  • 2 cloves of garlic 
  • 250 g ground lamb 
  • 2 tomatoes 
  • Salt
  • Pepper
  • Chile serrano
  • Paprika 
  • 3 bell peppers 
  • Oaxaca cheese 
  • A few stems of fresh parsley

Procedure 

     Personally, I am a person who freaks out when they first see this on a recipe, but bear with me..so, preheat the oven to 200° C. For the rice, in a saucepan, add 1/4 cup of water and 1/2 cup of rice. Put the lid on, and let cook for about 15 min, check on it every once in a while. For the tomatoes, boil them in water for a couple minutes and then blend them with a bit of salt and pepper. Now let’s move on to the peppers, for these if you’re wondering what kind of pepper to use, the difference in colours just depends on the levels of ripeness. Starting in green ending in red, so if you want a sweeter one, you should go for a red one.  Slice the top off, and remove the core. Chop the shallots and garlic. Then, in a pan, heat up the olive oil on medium heat and add the shallots. Wait a couple minutes and add the garlic until fragrant. Add the ground lamb until it’s no longer pink, which is when you’ll add a bit of chopped parsley…believe me, parsley goes great with lamb. Stir in the now cooked rice and the tomato sauce we made. Season with salt, pepper, paprika and a bit of chopped serrano, please don’t skip this step, it doesn’t make it spicy and gives a lot of flavour. Let it simmer until liquid has reduced. After that, halve up the bell peppers and place them on a baking dish, add the meat on them, and top with Oaxaca cheese. Drizzle a bit of olive oil on top and bake until peppers are tender, be careful, check on them before they get mushy. Serve and garnish with more parsley. 

     A vegan alternative with these, is switching the lamb for mushrooms, I did these for a friend who doesn’t eat meat and she loved them. Same process just switch. You can add vegan cheese for the final result.

     So there you go, your daily intake of Vitamin C and protein. It’s an amazing dish and it doesn’t take that long to make. It’s fun to eat out of a pepper every once in a while. But have a napkin ready…Pair with a refreshing drink and enjoy your rainy day weather. You can even use this recipe as an excuse for a date. Grab your loved ones and have a cooking date, they’re really fun, and at the end, you get to enjoy your results together. Breathe, thank, and improve.
