Camotes Rellenos

     ¿Te gusta la comida mexicana? ¿A quién no le gusta, verdad? Bueno, esta receta tiene un poco de giro pero sigue siendo lo más mexicana posible. Los camotes son una fuente increíble de beta-caroteno, el pigmento que transformamos en vitamina A. También son muy ricos en fibra, y de hecho se consideran la verdura número 1 más nutritiva. Así que vamos a cocinar con estas raíces milagrosas. 

Ingredientes 

  • 3 batatas 
  • 200g de frijoles negros 
  • 2 tomates 
  • 1/2 cebolla roja 
  • 2 aguacates 
  • 2 chiles serranos
  • 2 limas 
  • Sal y pimienta 

Instrucciones

     Precalentar el horno a 190C y forrar una bandeja de horno con papel pergamino. Lavar bien los camotes, yo recomendaría usar un cepillo ya que la piel tiene muchos nutrientes y es mejor que pelarlos. Hazles agujeros por todas partes y hornéalos hasta que estén tiernos entre 40 minutos y una hora. Compruébalos con un tenedor. Pica los tomates y asa el serrano. En un bol, tritura el aguacate y añade la lima. A continuación, en una sartén, añade aceite de oliva y echa un poco de cebolla picada hasta que esté fragante. Retira la cebolla del fuego y añádela al aguacate, mezcla bien y salpimienta. Cuando los boniatos estén hechos, haz un corte en todos ellos y ábrelos. Machaca la pulpa con un tenedor, añade las judías, el tomate, el guacamole y sazona con más sal y pimienta. Puedes tomarlo con un poco de salsa, pero a mí me encantó así. ¡Que lo disfrutes!

Stuffed Sweet Potatoes

     Are you into Mexican food? Who isn’t, right? Well, this recipe has a bit of a twist but it remains as Mexican as possible. Sweet potatoes are an amazing source of beta-carotene, thew pigment we transform into vitamin A. It’s also really high in fiber, and actually considered the number 1 most nutritious vegetable. So, let’s cook with these miraculous roots. 

Ingredients 

  • 3 sweet potatoes 
  • 200g black beans 
  • 2 tomatoes 
  • 1/2 red onion 
  • 2 avocados 
  • 2 chiles serranos
  • 2 limes 
  • Salt and pepper 

Directions

     Preheat oven to 190C and line a baking tray with parchment paper. Wash thoroughly the sweet potatoes, I would recommend using a brush since the skin has a lot of nutrients and it’s better than peeling it. Poke holes all over them and bake them until tender for 40 minutes to an hour. Check them with a fork. Chop the tomatoes and grill the serrano. In a bowl, mash the avocado and add the lime. Then, in a pan, add olive oil and throw some chopped up onion until fragrant. Remove the onion from heat and add it to the avocado, mix well and season with salt and pepper. When the sweet potatoes are done, cut a slit on all of them and spread them open. Mash the flesh with a fork, add beans, tomato, guacamole, and season with more salt and pepper. You can have this with some salsa, but I loved it this way. Enjoy!
