Chipotle Tofu Wrap

There’s something about wraps that I’m in love with. It could be the simplicity but flavour fulness of these or the ease to eat them. Either way, they’re really good. And today’s recipe is all about them. We’re making chipotle shredded Tofu wrap, although you could switch the tofu for any other protein you like and it would be just as good. This one goes out to all my vegetarian buddies out there. It’s great for a quick lunch, or for packing lunches. You just cut them in half, put them in your tupper and you’re ready to head out.

Ingredients

For filling

  • 350g extra firm tofu
  • 1 tbsp tomato paste
  • 1 tbsp olive oil
  • 1 tbsp soy sauce
  • 1 tbsp maple syrup
  • 1/4 tsp ground cumin
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp chili powder
  • 1/4 tsp paprika

Other

  • 4 lentil wraps (check our insta to see how to make them)
  • 1 cucumber
  • 1 tomato
  • 1/2 green bell pepper
  • 1/2 avocado
  • 100g salad greens
  • 50g mayonnaise (Piaf)
  • 50g chipotle peppers (Piaf as well)

How to make?

First, preheat your oven to 180C. Then, drain and pat dry your tofu and grate it. In a mixing bowl, add the tomato paste, olive oil, soy sauce, maple syrup, cumin, garlic & onion powder, chilli powder, and paprika. Add the shredded tofu and toss. Transfer tofu to baking tray, and spread it out to an even layer. Bake for 15 minutes, remember to check on it and toss it every once in a while. Remove from oven. Slice the tomato and avocado, julienne the cucumber and bell pepper. In a small plate, mix mayo with some chipotle until you make chipotle mayo. Grab your wraps, and assemble by adding some of the mayo, salad greens, cucumber, tomato, bell pepper, avocado, and tofu. Close from sides and cut in the middle. Serve and enjoy!

This makes for a great and delicious lunch on-the-go idea. It’s delicious, easy to transport, and very filling. Don’t forget to have fruit for dessert!
