Ensalada de calabaza y betabel rostizado

     Me encanta hacer esta ensalada como guarnición de un filete. No sé por qué combina tan bien. Ya llena lo suficiente por sí sola, pero me gusta más como acompañamiento. Lo que más me gusta de las ensaladas es la combinación de texturas, y esta es el ejemplo perfecto para ello, es crujiente, cremosa y las semillas la hacen 10 veces mejor. A cocinar. 

Ingredientes 

  • 500g de calabaza mannequilla
  • 500g de betabel
  • 200g de hojas para ensalada 
  • 100g de queso de cabra en cubos
  • 5g de pepitas tostadas
  • 2 cucharadas de aceite de oliva 
  • 1/2 cucharadita de ajo en polvo
  • 1/2 cucharadita de orégano seco
  • Sal y pimienta al gusto

¿Cómo se hace?

Precalentar el horno a 200C. En una sartén, añadir las pepitas con un poco de romero y tostarlas. Pele la calabaza y la remolacha y córtelas en cubos pequeños. Pásalos a una fuente de horno, añade aceite de oliva, ajo en polvo, orégano, sal y pimienta. Mezclar y combinar, hornear durante 30 minutos o hasta que estén tiernos. En un tazón grande, agregue las verduras de la ensalada, cubra con la calabaza y la remolacha asadas, el queso de cabra desmenuzado y las pepitas asadas, mezcle y disfrute.

     No hay mejor manera de recibir el otoño que con una receta de calabaza, vamos a entrar en el estado de ánimo de las fiestas comiendo limpio y saludable. 

Butternut squash and beetroot salad

     I love to do this salad as a side dish for steak. I don’t know why it pairs so well. It’s filling enough on its own but I like it better as a side dish. What I love most about salads is the combination of textures, and this one is the perfect example for it, it is crunchy, creamy and the seeds make it 10 times better. Let’s cook. 

Ingredients 

  • 500g butternut squash
  • 500g beetroot
  • 200g salad greens 
  • 100g goat cheese in cubes
  • 5og roasted pepitas
  • 2 tbsp olive oil 
  • 1/2 tsp garlic powder
  • 1/2 tsp dried oregano
  • Salt and pepper to taste

How to make?

Preheat oven to 200C. In a pan, add the pepitas with some rosemary and toast them. Peel the butternut squash and beetroot and cut up into small cubes. Transfer them to a baking dish, add olive oil, garlic powder, oregano, salt and pepper. Toss and combine, bake for 30 minutes or until tender. In a large bowl, add salad greens, top with the roasted squash and beets, crumbled goat cheese, and roasted pepitas, toss and enjoy!
