¡Feliz julio! Te voy a ser sincera, estaba disfrutando mucho de estos días más frescos pero parece que el calor nos ha vuelto a alcanzar.

Me he centrado en mi salud y mis hormonas mucho más de lo habitual. Me he sentido floja y seamos sinceros, a veces nos dejamos llevar por el trabajo y la vida por lo que nuestra salud y alimentación pasan a un segundo plano. PERO qué hipócrita soy al vender un estilo de vida saludable y no seguir las reglas yo misma.

He empezado a organizar comidas los fines de semana y a preparar la comida para la semana. Practica lo que se predica, ¿no?

En el menú de esta semana (honestamente es favorito de todos por aquí).
El Caldo de Res (sopa de carne), Te voy a decir un pequeño secreto. Aparte de ser tan, tan, tan delicioso, el caldo de res es realmente bueno para ti. He tenido problemas de intestino en el pasado y los he curado por mi cuenta con caldo de res, no estoy bromeando. Ayuda a combatir la inflamación, puede mejorar la salud de las articulaciones e incluso se sabe que mejora la función cerebral.

Realmente creo que nuestra energía, estado de ánimo y la salud en general están vinculados a nuestra salud intestinal.

Así que prepárate para un mes (o quizás más) de recetas para sanar tu intestino, mente y alma.

CALDO DE RES 

Ingredientes:

  • 1 kg de Chambarete
  • 1/2 kg de hueso con tuétano
  • Aceite Olivia
  • 4 Litros de agua (quizás un poco más, depende cuanto hagas)
  • 1 Cabeza de ajo
  • 1 Tomates
  • 1 Chile Xcatic
  • 1/2 Cebolla blanca
  • 2 Papas
  • 2 Calabaza local
  • 2 Chayotes
  • 4 Zanahorias
  • 2 Elotes
  • Sal
  • Pimienta
  • Orégano
  • Hoja de laurel
  • Ajo en polvo
  • Cebolla en polvo
  • Limón
  • Rábano
  • Cilantro

Procedimiento:

  1. Quemar el ajo, el xcatic, la cebolla y el tomate. Puedes quemarlo en el comal o directamente en el quemador (yo lo hago directamente en el quemador). Dora tu carne a fuego alto con un pequeño trago de aceite de oliva en una sartén aparte.
  2. Pica las verduras, puedes elegir el tamaño que quieras, yo generalmente las corto en cuartos, pero puedes hacerlas más pequeñas si quieres.
  3. Añade el agua a una olla grande y añade la carne una vez dorada. Añade todas las especias y hierbas, y cocina a fuego lento todo el día. Cuanto más tiempo se cocine, mejor y más nutritivo será. En serio, ponlo a cocer sobre las 8 de la mañana y añade las verduras sobre las 12. Cocina hasta que las verduras estén cocidas, probablemente alrededor de una hora.
  4. Pica el cilantro y el rábano juntos, déjalo reposar unos 30 minutos y adórnalo.

Happy July! I’ll be honest with you, I was really enjoying these cooler days but the heat seems to have caught back up with us.

I’ve been focusing on my health and my hormones a lot more than usual. I’ve been feeling sluggish and let’s be honest, sometimes we get caught up with work and life and our health and food takes a back burner. BUT how much of a hypocrite am I to be selling a healthy lifestyle and not following the rules myself.

I’ve started meal prepping on the weekends and ordering enough food for the week. Practice what you preach am I right?!?

On this weeks menu, and honestly its a fan favourite around here is Caldo de Res (beef soup), I’m going to let you in on a little secret. Aside from being so so soooo delicious, caldo de res is really good for you. I’ve had gut issues in the past and have cured them on my own with caldo de res, im not kidding you. It helps fight inflammation, can improve joint health and is even known to improve brain function.

I truly believe that our energy, mood and overall health are tied to our gut health.

So get ready for a month (or maybe more) of recipes to heal your gut, mind and soul.

BEEF CALDO

Ingredients:

  • 1 kg of Chambarete
  • 1/2 kg of Bone with Marrow
  • Oliv Oil
  • 4 liters of water (maybe a little more)
  • 1 Gead of Garlic
  • 1 Tomato
  • 1 Xcatic Chile
  • 1/2 White Onion
  • 2 Potatoes
  • 2 Local squash
  • 2 Chayotes
  • 4 Carrots
  • 2 Corn
  • Salt
  • Pepper
  • Oregano
  • Bay leaf
  • Garlic powder
  • Onion powder
  • Lemon
  • Radish
  • Cilantro

Procedure:

  1. Burn the garlic, xcatic, onion and tomate. You can burn it in the comal or directly on the burner (I do it directly in the burner). Brown your meat on high heat with a small swig of Olive oil in a separate frying pan.
  2. Chop your veg, you can pick whatever size you want, I generally cut them into quarters, but you can make them smaller if you’d like.
  3. Add the water to a big soup pot and add beef once browned. Add all the spices and herbs, simmer on low alllll day. The longer you cook this the better and more nutritious it will be. Seriously, put it on at around 8am and add the veg around 12. Cook until the veg is cooked, probably around an hour.
  4. Chop Cilantro, cilantro and radish together, let sit for about 30 mins and garnish.
