Jerk chicken beliceño.


Ingredientes.

 

  • 3 pollos enteros.
  • 4 pimientos dulces
  • 2 cebollas
  • 2 tomates
  • 10 dientes de ajo
  • 2 chiles habaneros (se pueden reducir)
  • 1 pulgada de jengibre
  • 10 hojas de orégano local
  • 1 cucharada de orégano seco
  • 1 cucharada de hojas de tomillo
  • ½ cucharada de pimentón en polvo
  • ½ cucharada de comino
  • ½ cucharada de pimienta negra machacada
  • ½ cucharada de sal
  • 3 oz de ron oscuro
  • 3 oz de zumo de lima
  • 20 semillas de cilantro
  • La cantidad de aceite de oliva que sea necesaria

 

Instrucciones.

  1. Corta los pollos en unos 8 trozos.
  2. Corta las verduras y añádelas al procesador durante un par de minutos.
  3. A continuación, añada las especias, el jugo de la lima y el ron a la batidora, mientras dobla el aceite de oliva a la mezcla hasta que quede suave.
  4. Cubra el pollo con la mezcla y déjelo reposar en la nevera, preferiblemente durante la noche, si no es posible, para que se haga lo más posible.
  5. Colocar una bandeja de horno en una barbacoa y dejar precalentar.
  6. Coloque el pollo en la bandeja y cocínelo durante unos 45 minutos.
  7. Rocíe el marinado extra con frecuencia mientras se cocina.

 

 

Belizean jerk chicken.

 

Ingredients 

  • 3 whole chickens. 
  • 4 sweet peppers
  • 2 onions
  • 2 tomatoes 
  • 10 cloves garlic
  • 2 habanero peppers (can be reduced)
  • 1 inch ginger
  • 10 leaves local oregano
  • 1 table spoon dried oregano
  • 1 table spoon thyme leafs
  • ½ table spoon paprika powder
  • ½ table spoon cumin
  • ½ table spoon crushed black pepper
  • ½ table spoon salt
  • 3 oz dark rum
  • 3 oz lime juice
  • 20 cilantro seeds
  • As much olive oil as needed  

 

Instructions

  1. Butcher your chickens in to around 8 pieces. 
  2. Cut the vegetables and add then in to the for processor for a couple of minutes. 
  3. Then add the spices, lime juice and rum to the blender, while bending add olive oil to the mixture until smooth. 
  4. Coat the chicken in the mixture and let sit in the fridge preferably over night if not possible for as long as u can. 
  5. Place a baking tray in a barbecue and let pre heat. 
  6. Place the chicken on the backing pan and cook for around 45 mins. 
  7. Drizzle the extra marinate frequently while cooking.
