Chocolate Lava Baked Oats

Chocolate Lava Baked Oats

There are days where I wake up inspired. Yesterday was one of them. Nothing makes me as productive as starting my days with a killer breakfast, it just gets me in a good mood and it’s the best way to start off your day. Once you get this in your body, no way anything can ruin it. How does a chocolate lava baked oatmeal sound? Like starting your day off with the right foot huh? Let’s begin…

What you’ll need:

  • 50g oats
  • 60ml soy milk
  • 3 tbsp applesauce
  • 1 tbsp monkfruit
  • 1 tbsp cacao
  • 1/2 tsp baking powder
  • 1/4 tsp vanilla extract
  • Pinch of salt
  • 20g sugar free dark chocolate (I used Ki’chocolatl as usual)

Directions:

First, preheat the oven to 180C, now grab a processor and add the oats, milk, applesauce, monkfruit, cacao, baking powder, vanilla extract, and salt. Process everything until smooth. By the way, you can substitute applesauce with smashed banana or some yogurt. Transfer the batter to a small oven proof container, maybe a muffin tray. Break up the chocolate and add it int he middle. Bake for 10 minutes and eat immediately, believe me, this makes the difference.

I don’t want to sound cocky, but this will be the breakfast you’ll make on special days, it takes a bit more than others, and it’s a bit sweeter than most, but it’s so unique and particular. It is a good way to sneak oats in and its just pure joy. Try it yourself and let me know how it goes.
