Huevos al Pesto

     Creo que más que una receta, esta es una idea para el desayuno que es un cambio de juego. Nunca había pensado que estas 2 cosas fueran juntas, pero créeme, lo van. Me refiero al pesto y a los huevos. El pesto es originario de Génova, Italia. Y aunque los franceses intentaron robarle el mérito, finalmente admitieron que era italiano. De hecho, cada dos años se celebra en Génova un campeonato mundial de pesto en el que participan cocineros de todo el mundo. El pesto suele ser una buena fuente de hierro y vitaminas A y C, pero los niveles de sodio pueden ser un poco elevados, así que, por difícil que sea, hay que consumirlo con moderación. 

Ingredientes 

  • Pesto “Mi Milpa”
  • 2 rebanadas de pan de masa madre “Jean Pierre 
  • 2 huevos 
  • Sal y pimienta 
  • Salsa macha Piaf 

¿Cómo se hace? 

     En una sartén, añade 4 cucharadas de pesto a fuego lento, una vez que empiece a chisporrotear, rompe dos huevos y cocínalos como te guste. Yo personalmente odio una yema no cocida, así que los cocino hasta el final. Mientras tanto, pon los panes en el horno durante unos minutos. Sirve los huevos sobre el pan con un pco de mayonesa de ajo y salsa.

     Puedes añadir un poco de aguacate para obtener grasas saludables, pero a mí me gustan así. Bonito y sencillo. Haz esta receta y cuéntame qué te parece el pesto con los huevos. ¿Amigos o enemigos? 

Pesto eggs 

     I think rather than a recipe, this is a breakfast idea that is a game changer. I had never thought these 2 things go together, but believe me, they do. I’m talking about pesto and eggs. Pesto is originary from Genova, Italy. And even though the French tried to steal the credit, they finally admitted it was Italian. There actually is a World Pesto Championship every two years held in Genova by cooks from all mourned the globe. Pesto is often a good source of iron, and vitamins A and C, but sodium levels can be a bit high, so as hard as it is, use in moderation.

Ingredients 

  • Pesto “Mi Milpa”
  • 2 slices of “Jean Pierre” sourdough bread 
  • 2 eggs 
  • Salt and pepper 
  • Salsa macha Piaf

How to make? 

     In a pan, add 4 tablespoons of pesto over low heat, once it starts to sizzle, crack two eggs and cook them however cooked you like them. I personally hate a non-cooked yolk, so I cook them all the way through. Tpast breads in the oven for a few minutes in the meantime. Serve the eggs on top of the toast with a tiny bit of garlic mayo and some salsa.

     You can add a bit of avocado for some healthy fats, but I like them this way. Nice and simple. Make this recipe and let me know how you think pesto goes with eggs. Friends or enemies?
