Lamb raised in the municipality of Timucuy, Yucatán by the Chel Aguayo family since 2003 based on a sustainable and ethical system, committed to the quality of meat products and care for natural resources on farms. We handle Pelibuey, Dorper and Katahdin breeds that ensure rusticity, prolificacy and meat for the commercial line of sheep. In our units, all the by-products are composted and reintegrated in a clean way to take care of the health of the soils for grazing.
Shoulder:Front leg of lamb also known as shank, without hormones or brines, contains bone in the center. Natural maturation of the meat in a high vacuum that allows offering a soft meat with a balanced smell and flavor. The pieces can vary from 600 to 680 grams.
